Kale chips are a great substitute for potato chips. They were very easy to make and the outcome was wonderful, though next time I will use a lot less salt.
1 bunch of kale (or whatever you have in the fridge)
1 Tbsp. Olive Oil (or just enough for a light coating)
some sea salt to taste
Heat oven to 300 degrees.
Line a cookie sheet with aluminum foil.
Seperate kale from stems and tear into bite sized pieces.
Place in a bowl and coat lightly with sea salt and olive oil.
Place single-layered on aluminum foil.
Bake for 20-23 minutes, or until crispy.
Add more sea salt if desired.
Let cool and store.
