Eggnog Pancakes


These pancakes make me feel fancy.



Eggnog Pancakes
Recipe from Joy the Baker
Makes enough for two

1 cup all purpose flour
1 tablespoon brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
heaping 1/2 teaspoon freshly grated nutmeg
1/8 teaspoon cinnamon
pinch of ground allspice
3 Tablespoons butter melted until browned
1 egg
1 cup buttermilk
2 teaspoons vanilla extract


In a small saucepan heat butter over medium heat until brown. Remove from heat and let cool for a minute then add spices.

In a medium bowl, beat buttermilk and egg until well combined.

In a larger bowl, combine flour, baking soda, baking powder, salt, and brown sugar together.

Add butter mixture to buttermilk mixture and mix until well combined. If the spices don't combine well with the buttermilk add the vanilla extract.


Add wet ingredients to dry ingredients and mix with until everything is combined but there are still a little lumps. Don't overmix!

Heat your skillet and cook your pancakes until air bubbles form on one side and then flip.

Serve with pure maple syrup.
